Genovese Basil is a slightly spicier variety of the common Sweet Basil. With just a hint of a bite, this basil variety is best known from the delectable Caprese Salad where it is combined with Roma Tomatoes, Fresh or Buffalo Mozzarella, Extra Virgin Olive Oil, Balsamic Vinaigrette, and freshly ground, coarse Black Pepper. This is our favorite Summer salad recommendation!
This less common variety has a stronger bite of spiciness when compared to Genovese Basil and pairs well with most salads in-place of Sweet or Genovese Basil. This is our favorite basil addition to salads during the Fall and Winter months due to its notes of clove, anise, and cinnamon!
This Southeast Asian basil is well known for its strong notes of anise. An excellent addition to many cooked meals when bold flavors are desired!
Italians favor the San Marzano as the only "true" tomato ingredient for authentic tomato pastes and sauces due to their sweet flavor with higher pulp content, fewer seeds and minimal acidity.
Roma Tomatoes are slightly smaller and have a more tangy flavor profile than the San Marzano variety. They are best used in fresh salads as their more compact size creates a richer flavor that beautifully compliments fresh greens and herbs. Romas can also be used for tomato sauces when San Marzanos are unavailable.

Known as Virginia's most popular wine grape, the Petit Manseng is bright and minerally on the nose, sweet with bracing acidity on the palate, and closes with a sweet and tangy flavor thanks to its notes of citrus and sugar.

Grown less than a hundred miles from where Thomas Jefferson cultured the first vineyard in the colonies, our Petit Verdot Grapes will begin producing useable harvests in 2027. The Petit Verdot is a full-bodied red wine producing black fruit aromas with herbal and floral notes that are perfect to blend with a Malbec or Merlot!
Grown less than a hundred miles from where Thomas Jefferson cultured the first vineyard in the colonies, our Malbec Grapes will begin producing useable harvests in 2028. The Virginia Malbec is relatively unknown to the wine world with only 17 acres planted for this variety, all north of Charlottesville in USDA Zone 7a where the primary issue is frost damage. The hope for Hidden Oak Farm, located in USDA Zone 7b, is that we will successfully produce an earthy-nosed Malbec with notes of Tobacco and Chocolate to pair with our Petit Verdot. As this will be a riskier endeavor, we will only begin with 1-2 acres planted in Malbec. To combat the frost damage issue, we plan to over-winter the grapes in hoop houses that use geothermal heating and raising the ambient temperature to about 50-55 degrees Fahrenheit during the worst of our thankfully short winters.
Grown less than a hundred miles from where Thomas Jefferson cultured the first vineyard in the colonies, our Mosel Valley Riesling Grapes will begin producing useable harvests in 2030-2032. These Rieslings are known for producing green apple, to peach, to lime aromas and flavors, and vary widely from dry to sweet. Another riskier endeavor, Hidden Oak Farm hopes to produce a solid green apple, apricot, or peach flavored wine that ranges from semi-dry to semi-sweet. If successful, we plan to hold around a quarter of our annual product back for very late harvests so that we can produce Eiswein, a delicious dessert wine that can only be produced from grapes that are harvested on the first day of frost.
